The palate has the same fruit characteristics of the nose but rich and viscous. The exception being in April where heavy rain was received causing some issues for certain varieties. However, the wet created perfect conditions for the development of the Botrytis fungus essential for the production of this wine style. Dry conditions in May ensured the infected berries dried out perfectly.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003e\u003cstrong\u003eWINEMAKING:\u003c\/strong\u003e Hand harvesting along with careful bunch selection was followed by gentle whole-bunch pressing of the fruit. Fermentation of the clear juice was slow, in part due to the impact of the high sugar level on the vigour of the yeast. The wine was also kept at a low temperature to ensure the aromatic elements were perfectly captured. The fermentation was arrested by chilling the wine to below zero which left a considerable amount of sugar in the wine. The start to spring was cool with temperatures below average. Despite that, as the season progressed, temperatures picked up and we experienced good flowering conditions, resulting in a healthy and balanced crop. Summer saw us experience 30+ degree days mixed in with considerably colder spells which carried through into March and April as we started harvest. What was initially thought to be an early harvest balanced itself out to commence in late March and the fruit was picked at optimum ripeness levels.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eWINEMAKING:\u003c\/strong\u003e The MC1 Sauvignon Blanc block was targeted for this Sauvignon Blanc – low yielding and known for its intense flavours. Harvested in the cool of the morning, the fruit was transported to the winery for pressing, cold settled then inoculation with 3 different thiol generating yeasts and the balance drained to barrel for wild fermentation. The wine in tank was stopped by chilling to leave some residual sugar for balance while the barrels fermented through to dryness. Post ferment the wine in tank was left on lees for 4 weeks then racked off gross lees while the wine in barrel was left for 5 months to build texture. Following regular assessment of the developing fruit flavours the parcels allocated to the Tiki Single Vineyard Pinot Gris were harvested five days apart both as early morning picks to preserve the varietal characteristics.\u003cspan style=\"mso-spacerun: yes;\"\u003e  \u003c\/span\u003eThe free run juice from both picks were amalgamated into one tank then inoculated with an aromatic yeast and fermented at 13 – 15C to enhance the aroma and flavour profile.\u003cspan style=\"mso-spacerun: yes;\"\u003e  \u003c\/span\u003eMeanwhile, juice was drained from the tank post inoculation to fill two old French oak barrels for ferment with the concept being this would add complexity, richness and texture to a wine that had plenty of fruit flavours. The wine in tank was racked off gross lees three weeks after ferment and the barrel portion left on their lees for two months to build that texture and complexity. Anticipating an early harvest due to the warm temperatures and low yields, the dry end to the season saw minimal disease pressure. We were able to leave the fruit on the vines allowing it to reach optimum levels of ripeness before picking. The barrel configuration was a mix of new, 1 year old then older French barriques. Post fermentation, the barrels were stirred fortnightly for two months then left to sit over winter then they naturally went through malolactic fermentation in the spring.
