The grapes were gently pressed and allowed to cold settle in tank. Once the juice was clear and bright it was racked off gross lees then inoculated with X5,a well renowned Sauvignon Blanc yeast and fermented at 13 – 15C to enhance the aroma and flavour profile of the vineyard.
