Waiata Chardonnay 2025
Chardonnay from the Waipara Valley, North Canterbury. Sold by the six-pack.
Tasting note
Pale straw green. Classic Chardonnay notes of stone fruit, nectarine and grapefruit, alongside a mealy, creamy palate with nuances of nougat, brioche and a hint of oak and spice.
Winemaking
The Chardonnay was picked in the cool of the morning, crushed, gently pressed and settled for 12 hours. It was fermented to dryness in tank with a Burgundian Chardonnay yeast and oak for an inviting oak influence. A portion then went to oak barrels, stirred fortnightly for two months and left on lees for nine months to build weight and texture. Malolactic fermentation followed in spring, with blending early in the new year.
Vintage conditions
2025 was a favourable vintage in Waipara, with early bud burst and flowering and a hot, dry early summer through to the new year. From January temperatures cooled, with long spells of cloud cover and some rain bringing the season back into balance. Despite some sporadic rain in March, harvest ran about a week ahead of normal, and the fruit came in in excellent condition and fully ripe.
