VINTAGE 2025 TASTING NOTES BELOW:
NOSE & PALATE: Flavours of tropical passionfruit and lemongrass that align with a
bright, juicy palate. A complex wine with a long, lingering finish. A delicate pale green/gold colour.
REGION: 100% Waipara Valley, North Canterbury.
WINEMAKING: The blocks allocated to the Maui Sauvignon Blanc were harvested as the flavours reached their optimum. The grapes were gently pressed and allowed to cold settle in tank. Once the juice was clear and bright it was racked off gross lees then inoculated with X5,a well renowned Sauvignon Blanc yeast and fermented at 13 – 15C to enhance the aroma and flavour profile of the vineyard. Post ferment the wines were left on their fine lees for 4 months until blending in August which helped build mouthfeel and texture to compliment the fruit.
